Necessary Ingredients:
Water chestnut flour: 250 grams
Jaggery or sugar: 250 grams
Ghee: 100 grams
Recipe:
First, put jaggery in half a cup of water in a pan and melt on medium heat. Now filter water chestnut flour in another vessel with the help of a sieve. Now add a little water to this filtered flour and prepare the batter well until the guthli is over. Now pour this solution in the melted jaggery and stir continuously. Now put two spoons of ghee in it and also reduce the heat.
When the solution starts to thicken, then add the remaining ghee in it and stir continuously till it starts to thicken and leave the edges of the pan. And the ghee poured into it starts to appear on the pudding, then remove it in a plate with ghee and spread it well. And keep it to cool for 10 to 15 minutes. When it cools down, with the help of a knife, cut it into squares or as per your desire. In this way, water chestnut pudding is prepared.
* When we prepare Singhara flour solution, then prepare water solution by adding 3 times the amount of flour in it.
** Garnish the Katlis with 1-1 teaspoonfuls of cashew or almonds according to their taste.
